Growing up, I never thought much about how the foods I ate and my daily stomach pains could be related. The symptoms I experienced were bloating, abdominal pains, chest pains, nausea, headaches and fatigue. As I suffered everyday through this, I began believing it was normal. Doctors diagnosed me with GERD, Irritable Bowel Syndrome (IBS), and stomach ulcers and prescribed medication after medication to relieve my symptoms. Thinking I just had bad heartburn, I tried staying away from certain trigger foods such as tomatoes, citrus and cruciferous vegetables; all to no avail.
About four years ago I was sitting in my doctor's office, waiting for my name to be called. As I paged through a magazine, I came to an article about a middle aged woman who suffered terribly from what she thought was IBS. She became pregnant, then miscarried, and because of this unfortunate incident, was properly diagnosed with Celiac Disease. I tore out the article to show to my doctor, who briefly educated me on what a wheat and gluten intolerance really is. (For information on Celiac Disease, please visit www.celiaccentral.org) I immediately eliminated wheat and gluten from my diet while educating myself furthur and my symptoms instantly began to disappear. Becoming more aware of how food can heal (or hurt) me, I embarked on a wheat/gluten free and vegetarian diet, focusing mainly on whole raw living foods for nourishment.
Even with this condition, I consider myself very, very blessed. Being wheat and gluten free has opened my eyes and revealed a passion for creating healthy, nutritious foods to share with others. My wish and desire is to help others who may have a food intolerance to overcome their fears and frustrations.
